At the Mont-Renaud Estate, the Monsieur Léon restaurant is far more than a new dining address in Ajoie. Rooted in human, agricultural, and sustainable values, it showcases produce from the estate and a strong local commitment.

In collaboration with the Fondation Les Castors, the restaurant also contributes to the professional integration of people with disabilities.

Local and organic

Vegetables come directly from the neighbouring market garden, grown using organic farming methods. Eggs and honey are also produced on site. Freshness, traceability, and zero food miles: a natural luxury.

Produce fromthe market garden

The market garden of the sheltered workshops of the Fondation Les Castors supplies our kitchen with seasonal organic vegetables, as well as fresh eggs and honey — all grown and harvested just a few steps from our kitchens.

Our chefs work in direct collaboration with the workshop teams to adapt the menu to the week’s harvest. This living partnership gives rise to truly seasonal cuisine, where nothing is improvised and everything is carefully considered.

The daily menu at Monsieur Léon faithfully reflects what the gardeners have harvested — a rare and precious connection between the land and the table.

Beyond the market garden, the Mont-Renaud Estate relies on the full range of workshops of the Fondation Les Castors to outsource its services. A deliberate, coherent, and deeply human choice.

Artisan bakery

Bread, pastries, and baked goods — the bakery workshop supplies us with artisanal products that help shape the distinctive culinary identity of our table.

Artisanal pasta

Our fresh pasta is carefully crafted by the pasta workshop. Authentic craftsmanship that is directly reflected on the plate, with that irreplaceable handmade taste.

Laundry service

Nearly all of our linen — sheets, towels, tablecloths, and uniforms — is entrusted to the laundry workshop. Impeccable quality, punctuality, and a true commitment to well-done work.
